Bone protein is a significant secondary product of the meat industry, comprising substantial quantity protein. These proteins could be broken down through enzymatic hydrolysis to generate antioxidant peptides. This study aimed produce peptides from bovine bone extract by utilizing Flavourzyme and Protamex optimizing enzyme amounts time using Box–Behnken design. The final optimized conditions obtained model were as follows: amount was 1,100 U, 2,814 3.77 (h). Bovine hydrolysate (BBEH) purified stepwise ultrafiltration membranes with molecular cutoffs 5, 3, 1 kDa. To assess capacity fractions, several methods used, including radical scavenging activity “1,1-diphenyl-2-picrylhydrazyl (DPPH),” “2,2′-azino-bis (3-ethylbenzothiazoline-6-sulfonic acid) (ABTS),” metal chelating (MCA), reducing power (RP), thiobarbituric acid assay (TBA). results indicated that fraction weight less than kDa showed activity, 48, 42, 50% inhibition rates for DPPH, ABTS, chelating, respectively. Using size exclusion chromatography, further separated into five sub-fractions: Frac-I, Frac-II, Frac-III, Frac-IV, Frac-V. Sub-Frac-III, which exhibits DPPH (55%) 0.8 at 700 nm, six sub-sub-fractions reversed-phase HPLC (RP-HPLC) based on hydrophobicity. sub-sub-fraction highest value sub-Fra-III-6, exhibited approximately 69.45% activity. sub-Fra-III-6 analyzed LC–MS/MS, identified two specific peptides: Ala-Pro-Phe mass 333.12 Da Asp-His-Val 369.14 Da. are likely primary might have crucial role in capacity. It can concluded BBEH valuable source natural antioxidants has potential serve viable resource cultured industry.

The objective of this study was to isolate and characterize collagen angiotensin-I-converting enzyme (ACE)-inhibitory (ACEi) peptides from the swim bladders monkfish (Lophius litulon). Therefore, acid-soluble (ASC-M) pepsin-soluble (PSC-M) with yields 4.27 ± 0.22% 9.54 0.51%, respectively, were extracted using acid methods. ASC-M PSC-M contained Gly (325.2 314.9 residues/1000 residues, respectively) as major amino acid, but they had low imino content (192.5 188.6 in comparison calf skins (CSC) (216.6 residues). sodium dodecyl sulfate-polyacrylamide gel electrophoresis (SDS-PAGE) patterns ultraviolet (UV) absorption spectrums illustrated that mainly composed type I collagen. Subsequently, three ACEi isolated a hydrolysate prepared via double-enzyme system (alcalase + neutrase) identified SEGPK (MHP6), FDGPY (MHP7) SPGPW (MHP9), molecular weights 516.5, 597.6 542.6 Da, respectively. SEGPK, displayed remarkable anti-ACE activity, IC50 values 0.63, 0.94 0.71 mg/mL, Additionally, docking assay demonstrated affinities ACE -7.3, -10.9 -9.4 kcal/mol, activity due their connection active pockets and/or sites hydrogen bonding, hydrophobic interaction electrostatic force. Antarctic krill (Euphausia superba) is the world's largest resource of animal proteins and thought to be a high-quality for future marine healthy foods functional products. Protein hydrolysate (AKH) prepared by trypsin showed highest Ca-chelating rate under optimized chelating conditions: pH 8.0, reaction time 50 min, temperature °C, material/calcium ratio 1:15. Subsequently, fourteen peptides were isolated from APK ultrafiltration series chromatographic methods identified as AK, EAR, AEA, VERG, VAS, GPK, SP, GPKG, APRGH, GVPG, LEPGP, LEKGA, FPPGR, GEPG with molecular weights 217.27, 374.40, 289.29, 459.50, 275.30, 300.36, 202.21, 357.41, 536.59, 328.37, 511.58, 516.60, 572.66, 358.35 Da, respectively. Among peptides, VERG presented ability. Ultraviolet spectrum (UV), Fourier Transform Infrared (FTIR), scanning electron microscope (SEM) analysis indicated that VERG-Ca chelate had dense granular structure because N-H, C=O -COOH groups combined Ca2+.
