Several medicinal mushrooms have been approved as European Novel Foods or the potential to become Foods. However, their chemical characterization is limited, being mainly focused on specific compounds. Here, dehydrated mycelia (isolated from sporophores collected in Italy) of Grifola frondosa, Hericium erinaceus, recently defined Foods, and Cordyceps militaris Laricifomes officinalis, with Food use, were analyzed by NMR methodology define metabolite nutritional profile. Amino acids derivatives, sugars polyols, organic acids, fatty lipid polar moieties, nitrogen-containing compounds identified quantified hydroalcoholic extracts. C. showed a high amount glutamate, citrate mannitol, also involved mushroom taste, only species presenting tri-unsaturated acids. L. officinalis was characterized highest TAA EAA, lowest polyols content. G. frondosa H. erinaceus amounts trehalose (13-14 % dried weight). Each potentially represents an innovative food matrix alone, for culinary, nutraceutical needs, mixed together obtain new products. Moreover, these can be interest sources isolated bioactive supplements particular functions.

For this reason, many approaches have developed order replace food beverage formulations with alternative sweetening compounds. The raising awareness concerning synthetic sweeteners due their negative impact on health, triggered need search for substances. Natural may be classified in: (i) non-nutritive (e.g., neohesperidine dihydrochalcone, thaumatin, glycyrrhizin mogroside stevia) (ii) bulk sweeteners, including both polyols maltitol, mannitol, erythritol) rare sugars tagatose allulose). review we discuss most popular natural application main sectors bakery, dairy, confectionary beverage), providing a full understanding textural sensory properties comparison sucrose. Soybeans (Glycine max [L.] Merr.) are a globally significant crop, valued for their high protein content and nutritional versatility. However, they contain anti-nutritional factors (ANFs) that can interfere with nutrient absorption pose health risks. This comprehensive review examines the presence impact of key ANFs in soybeans, such as trypsin inhibitors, lectins, oxalates, phytates, tannins, soybean polysaccharides, based on recent literature. The physiological roles, potential hazards ANFs, detailed balance between harmful beneficial effects human health, well efficacy deactivation or removal techniques food processing, were discussed. findings highlight dual nature soybeans. Some have been found to offer benefits include acting antioxidants, potentially reducing risk cancer, exhibiting anti-inflammatory effects. it is important note same also negative impacts. For instance, tannins may lead gastrointestinal discomfort contribute mineral deficiencies when consumed excess without proper processing. will provide clear understanding role soybean-based diets inform future research processing strategies.

Abstract Lentinan (LNT) is a polysaccharide from Shiitake mushrooms that has significant effects regarding antioxidant, hypoglycemic, anti-inflammatory activities, etc., and this effect influenced by the human intestinal flora. However, interactions between LNT microorganisms, their metabolic processes, remain unclear. In study, fermentation characteristics of its on flora metabolites were studied in vitro fermentation. Our results indicated was effectively utilised microbiota, utilisation rate 62.7 ± 3.0% after for 48 hr. The concentrations short-chain fatty acids (mainly acetic acid propionic acid) increased to 4.157 0.197 5.847 0.283 mM, respectively. also relative abundance beneficial bacteria, such as Bifidobacterium Parabacteroides, while reducing harmful bacteria like Veillonella Klebsiella. Metabolomics microbial correlation analysis revealed catabolism accompanied amino catabolism, especially alanine, aspartic acid, glutamate, biosynthesis adenosine 5’-monophosphate, etc. These findings suggest can support gut health demonstrates potential prebiotic.
