Salmon processing commonly involves the skinning of fish, generating by-products that need to be handled. Such skin residues may represent valuable raw materials from a valorization perspective, mainly due their collagen content. With this approach, we propose in present work extraction gelatin farmed salmon and further remaining residue through hydrolysis. Use different chemical treatments prior thermal results consistent yield around 5%, but considerable differences rheological properties. As expected cold-water species, produces rather weak gels, ranging 0 98 g Bloom. Nevertheless, best performing gelatins show structural integrity, assessed by gel permeation chromatography with light scattering detection for first time on gelatin.
