This study assessed the effects of Micro-bubble (MB; average size 36.50 μm) on physicochemical properties live shrimp (Litopenaeus vannamei) and cooked ones. also examined visual appearance, intestinal sludge's presence, microbial decontamination efficacy, meat's textural properties. In addition, sensory evaluation was conducted to appraise impact MB gustatory aromatic attributes shrimp. showed that treatment substantially better than traditional aeration (TA) in terms color, sludge cleanliness. Specifically, all above indicators exhibited optimal performance by 30 group. Moreover, effectively microbes, reduced total volatile bases nitrogen (TVB-N; from 15.27 10.30 mg/100 g) improved indicators, while best performed with MB30 The groups enhanced aroma taste profiles (7.45 8.00 points) compared TA (6.80 7.80 control (7.15 7.25 groups, favored panels.
