Achieving a sustainable global society is dependent on effective modern food systems and literacy competency. (1) Background: Food insecurity (FI) among university students has received less attention in Europe than other regions before and during the COVID-19 pandemic. The aim was to examine the relationship between food insecurity and adherence Mediterranean diet, academic achievement, depression, anxiety, stress among university students. Food insecurity is a pressing global concern affecting individuals across all age groups. Despite its widespread impact, notable gap remains in the literature, particularly reference to literature concerning university students. Abstract Background Food insecurity (FI) is a collective term for inadequate access to available, affordable, and safe nutritious food. FI could affect students’ health academic performance adversely. Currently, there paucity of research on food among tertiary students in Ghana. This cross-sectional study aimed to estimate the relationship between food insecurity (FI) and health-related quality of life (HRQoL) in patients with celiac disease (CD) assess whether this is mediated or moderated by adherence gluten-free diet (GFD). This study examined the impact of university students' perceptions food insecurity on psychological well-being, self-efficacy, and life satisfaction observed that gender plays a moderating role in this causal relationship, based total 491 students who participated empirical study. used SPSS (Version 22.0) AMOS 20.0) for analyses. examines structural relationship model.
