Liquid smoke is a natural product made up of concentrate which used to impart smoky flavour without resorting the traditional smoking technique: it practical use, cheap, easy dose, able control presence undesirable substances and, above all, with reduced environmental impact, unlike systems. On other hand, has low preservation effect. Thus, objective this study was design production an innovative fish using liquid in combination compounds through three subsequent phases: 1) economic concept evaluation assess acceptability proposed qualitative and quantitative investigation; 2) optimisation process (individuation composition parameters) modelling predictive tools, i.e. tertiary secondary models; 3) realization its terms microbiological profile, chemical-physical parameters, consumers' acceptability. Results show that sea bream bass fillets could be sprayed solution composed by lemon extract (0.75%), acetic acid (0.5%), NaCl (2%), (0.002%), packed under vacuum stored at 4 °C for least two weeks, during spoilage bacteria maintained cell loads. After 14 days, fact, smoked showed total viable count psychrotrophs about 5 log CFU/g, Pseudomonadaceae 6 while Enterobacteriaceae loads 2–3 CFU/g were recorded. Other microbial groups absent pathogens never detected. In addition, results from consumer survey highlight over 60% interviewed sample appeared inclined accept innovation, 50% respondents also willing pay premium price 20%, thus suggesting eco-smoking technique adopted help ensuring more sustainable food production.
