Food sustainability is a new concept of sustainability, which complemented by the criteria culture, eating traditions and food availability. However, technology sausage products was not created for sustainability. Technology developed using dietary, local, seasonal economically available semi-finished with long shelf life, component public health zero hunger. Dried from beets snails are used as coloring, source nitrites, complete protein, unsaturated fatty acids minerals. Research shows red sausages, based on white sausages in Poland (Biała kiełbasa) Germany (Weißwurst) its analysis terms beetroot added to recipe amount 0 % (B0), 0.5 (B1), 1.0 (B2), 1.5 (B3), 2.0 (B4) 2.5 (B5) chicken fillet. Pork rind replaced snail powder 15 30 45 60 75 (B5). Color B3 best combined Ukrainian cuisine. Texture profile had similar values B0 chewiness at 306.6. Overall acceptability higher than 8.92 amounted 8.67. Physicochemical indicators B3, such pH 5.81, peroxide value 0.248 g/100 g thiobarbituric acid reactive substances 0.667 mg/100 were better B0.
