Bioactive peptides obtained from proteins, released by enzymatic hydrolysis or fermentation, can be employed as a natural alternative antibiotics preservative agents, their ability inhibit growth several microorganisms. Plant protein industry is increasing over animal protein, environmental welfare population. Considering antibiotics, exploitation source antimicrobial gaining interest recent years. This review aims summarize published literature on hydrolysates peptides, fermentation plants, mechanisms, producing fortified products edible coatings. This study presents the state-of-art research about assembly of soy proteins in nanocarriers, liposomes, and its design includes different physicochemical strategies approaches: two-step enzymatic hydrolysis concentrate, hydrolysate encapsulation by using phospholipids cholesterol, application ultrasonication. Achieved results revealed that ultrasonication, together with cholesterol addition into phospholipid layers, improved stability nanoliposomes, a maximum EE value 60.5 % was obtained. Average size peptide-loaded nanoliposomes found to be from 191.1 286.7 nm, ζ potential -25.5 -34.6 mV, polydispersity index 0.250-0.390. Ultrasound-assisted process did not lead decrease antioxidant activity trapped peptides. FTIR has indicated an effective hydrophobic interaction between phosphatidylcholine TEM SEM have confirmed spherical nanocarrier structure unilamelarity. Prolonged gastrointestinal release peptides been enabled liposome nanocarriers.
