Tea polyphenols (TPs) are the most important active component of tea and have become a research focus among natural products, thanks to their antioxidant, lipid-lowering, liver-protecting, anti-tumor, other biological activities. Polyphenols can interact with food components, such as protein, polysaccharides, lipids, metal ions further improve texture, flavor, sensory quality food, widely used in fields, preservatives, antibacterial agents packaging. However, instability TPs under conditions light or heat low bioavailability gastrointestinal environment also hinder application food. The favorable inhibitory effect of tea polyphenols on heterocyclic aromatic amines (HAAs) has been confirmed in many past studies. objective this study was to investigate the structure-activity relationship catechins that act as inhibitors HAA formation chemical models. Two kinds quantitative models for catechin-inhibiting-HAA were established. We chose two HAAs including 2-amino-1-methyl-6-phenylimidazo[4,5-b]pyridine (PhIP) and 2-amino-3,8-dimethylimidazo[4,5-f]quinoxaline (MeIQx), five epigallocatechin gallate (EGCG), epicatechin (ECG), (EGC), (EC), catechin (C). following order: EGCG > ECG EGC C EC. Thereinto, showed dramatically better inhibition PhIP MeIQx, especially EGCG. Further, mechanisms speculated by correlation analysis. free radical-scavenging ability predicted be most relevant ECG, EGC, EC HAAs. Quercetin, a dietary flavonol enriched in food, regulates immune-related models through epigenetic modifications. However, few studies have explored the transmission of regulatory effects across generations to progeny. (-)-Epicatechin (EC) is a commonly dietary phytochemical that presents multi-physiological activities on human health. This study examined the impact of tea polyphenols (TPs) on intestinal flora loaches (Paramisgurnus dabryanus) under chronic ammonia nitrogen stress using high-throughput sequencing. Two groups 600 were studied over one month, and they separated into a control group polyphenol group. Alpha beta diversity analyses showed diverse bacterial communities, with significant differences in abundance uniformity observed initially but not between sampling time points.
