Abstract In this study, cellulose nanocrystals (CNCs) were synthesized from celery stalks to be used as the platform for quercetin delivery. Additionally, CNCs and CNCs–quercetin characterized using results of scanning electron microscope (SEM), transmission microscopy (TEM), X‐ray diffraction (XRD), Fourier transform infrared (FTIR) spectroscopy, zeta potential, while their interactions with human holo‐transferrin (HTF) also investigated. We examined interaction under physiological conditions through exertion fluorescence, resonance light scattering, synchronized fluorescence circular dichroism, three‐dimensional energy transfer techniques. The data SEM TEM exhibited spherical shape also, a decrease was detected in size quercetin‐loaded 676 473 nm that indicated intensified water solubility quercetin. success acid hydrolysis confirmed based on XRD results. Apparently, crystalline index reduced by quercetin, which resulted appearance functional groups, shown FTIR. HTF demonstrated induced quenching intensity emission Stern–Volmer represent occurrence static quenching. Overall, effectiveness vehicles suggests its potential suitability dietary supplements pharmaceutical products.
