Introduction: Polycystic Ovary Syndrome (PCOS) is an endocrinopathy affecting women of reproductive age.Hyperglycemia can exacerbate PCOS, especially in the presence overweight and obesity.Certain food species, including tuberous root yacon (Smallanthus sonchifolius), which yields syrup, show promise human health.Yacon a natural source fructooligosaccharides (FOS) phenolic compounds such as chlorogenic acid, be considered prebiotic, exhibiting antiglycation properties offering various health benefits, reducing postprandial glycemic concentrations.Objective: To investigate whether providing syrup to overweight/obese diagnosed with PCOS contribute glycemia.Methods: The study 15-day randomized double-blind crossover clinical trial.After obtaining approval from Ethics Committee, or obesity were invited participate.Biochemical examinations, anthropometric assessments, habitual dietary record collection, continuous glucose monitoring device installation conducted.Two packages, containing placebo, appropriately labeled, provided.The comprised Phase 1, washout, 2, participants randomly assigned each phase.They consumed at breakfast, lunch, dinner, measuring pre-meal, immediate post-meal, 1-hour 2-hour post-meal levels.Meal analyses conducted both collectively individually.Statistical included Student's t-test mixed-effects linear regression model.Results Discussions: Twenty withPCOS evaluated, 60% (n=12) 40% (n=8) obese, mean age 27.15 (±5.92) years.There no statistically significant differences consumption (p<0.05).Regarding data, observed glycemia for overall meals (p=0.007) breakfast dinner (p=0.03 p=0.034, respectively). Conclusion:This demonstrated that obese resulted reduction rate increase.

Population growth and the increased enthusiasm for vegan, vegetarian, flexitarian diets have driven global demand plant-based meat alternatives. In particular, textured soybean burgers has due to their high protein content convenience. This led a certain rejection by consumers, who prefer healthier, more nutritious sustainable products. Prebiotic nutritional ingredients have received attention due to their health-promoting potential and related uses in the food nutraceutical industries. Recent times witnessed an increasing interest use of fructooligosaccharides (FOS) as prebiotics generation using microbial enzymes. FOS consumption is known confer health benefits such protection against colon cancer, improved mineral absorption, lowering effect on serum lipid cholesterol concentration, antioxidant properties, favourable dietary modulation human colonic microbiota, immuno-modulatory effects.
