The fatty acid (FA) compositions of thirty-nine vegetable oils and fats, including nangai nut, pili shea butter, tamanu oil, baobab, sea buckthorn berry, Brazil grape seed, black evening primrose, passion fruit, milk thistle, sunflower, pumpkin sesame, soybean, flax kukui, red raspberry walnut, chia hemp rosehip, almond, avocado, carrot moringa, apricot kernel, camellia macadamia, olive, marula, argan, castor, jojoba, pomegranate medium-chain triglyceride (MCT) coconut, roasted canola, mustard were analyzed using gas chromatography–mass spectrometry (GC-MS). Vegetable fats have different profiles in terms their composition, major constituents vary significantly. However, we categorized them into classes based on the percentages acids they contain. saturated acids, such as palmitic stearic acid, unsaturated oleic linoleic linolenic are main categories. Among them, coconut oil contained greatest amount followed by nut (45.61%). Passion fruit largest (66.23%), while seed had highest content (58.25%). Oleic was exclusively present constituting 78.57% its composition. Notably, a significant presence erucic (54.32%), punicic (74.77%). Jojoba primarily consisted (Z)-11-eicosenoic (29.55%) (Z)-docos-13-en-1-ol (27.96%). constituent castor ricinoleic (89.89%). Compared with other (E)-FA (20.62%), berry 9.60%. FA from sources may be problematic human diet due to no labeling or absence essential components. Therefore, consumers must cast an eye over some components consumed dietary intake.
