Cow's milk is the most widely used ingredient in infant formulas. However, its specific protein composition can cause allergic reactions. Finding alternatives to replace cow's and fill nutritional gap with human essential for health of infants. Proteomic peptidomic techniques have supported elucidation milk's ingredients. Recently, omics approaches attracted increasing interest investigation because their high throughput, precision, sensitivity, reproducibility. This review offers a significant overview recent developments proteomics peptidomics study differences human, cow, donkey milk. All three types milks were identified critical biological functions health, particularly Donkey proteins closer milk, less likely reactions, may be developed as novel raw materials formula powders.

The aim of this study was to identify and characterize the bioactive peptide profile Podolica cow's milk. This dairy product is known for its nutritional properties related presence peculiar lipids a typical breed traditionally reared in southern Italy. Using top-down peptidomics, we identified 2213 peptides milk samples from four different farms, with 19 matching sequences. Bioactivities include dipeptidyl peptidase-IV (DPP-IV) inhibition, angiotensin-converting enzyme (ACE) antioxidant activity, enhanced calcium uptake, other potential antimicrobial effects. DPP-IV-inhibitory (e.g., LDQWLCEKL VGINYWLAHK) suggest type 2 diabetes management, while ACE inhibitors (such as YLGY FFVAPFPEVFGK) could support cardiovascular health by reducing hypertension. Antimicrobial such SDIPNPIGSENSEK VLNENLLR showed broad spectrum activity against various harmful microorganisms, positioning promising source natural agents. Additionally, osteoanabolic, antianxiety, immunomodulatory further highlight multifaceted benefits associated Our findings underline functional richness bioactivity properties, which enhance value derived products contribute sustainable agricultural practices.
