Olive leaves are residues from pruning and harvesting considered an environmental management problems. Interestingly, these contain high polyphenol concentrations, which can be used to treat chronic diseases. However, compounds a technological challenge due their thermolability reactivity during extraction. Thus, this study assessed the use of pressurized liquid extraction (PLE) with green solvents like water-ethanol water-glycerol mixtures (0–15%) at 50 °C 70 yield polyphenol-rich antioxidant extracts reduced glucose fructose content. The 30% ethanol 70°C presented highest content (15.29 mg gallic acid equivalent/g dry weight) capacity, was expressed as IC50 (half maximal inhibitory concentration): 5.49 mg/mL oxygen radical absorbance capacity (ORAC): 1259 μmol Trolox weight, well lower sugar (glucose: 3.75 mg/g fructose: 5.68 compared water–glycerol mixtures. exhibits higher degree effectiveness in recovering flavanols, stilbenes secoiridoids, while glycerol improves phenolic acids flavonols. Kale (Brassica oleracea) is recognized as a ‘superfood’ among leafy vegetables due to its high carotenoid content and potential health benefits. This study aims optimize ultrasound-assisted extraction (UAE) enhance the recovery of carotenoids other phytochemicals from upcycled kale using response surface methodology. The optimized parameters for carotenoids, i.e., aqueous ethanol solvent, temperature, time at fixed solid-to-solvent ratio, were established central composite design. method was compared with reported methods total phenolic (TPC) antioxidant capacity (ferric reducing power (FRAP) 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging). Ultra-high-performance liquid chromatography–electrospray ionization–mass spectrometry (UPLC-ESI-MS) analysis also performed. Under UAE conditions 100% 57 °C 30 min, 392 µg/g dry weight (DW) observed, though predicted 550 DW. these conditions, TPC, FRAP, DPPH 10.5 mg gallic acid equivalents/g DW, 13.9 µmole Trolox equivalence/g scavenging activity IC50 2.04 ± 0.31 mg/mL, respectively. UPLC-ESI-MS showed highest recovered through microwave-assisted extraction, followed by UAE, tested methods. In conclusion, process significantly enhanced yield quality kale.
