The aim of this review is to summarize and analyze up date information related the impact fermented dairy plant foods on modulation anti-inflammatory pathways MAPKs NF-κβ associated with inflammatory bowel disease (IBD). Traditional colitis treatment strategies have issues such as side effects and poor lesion targeting. In this study, a milled black rice particle-stabilized Pickering emulsion (BR-5-DMN) has been developed delivery vehicle for 5-demethylnobiletin (5-DMN) to treat colitis. The alleviating of three 5-DMN systems: BR-5-DMN, Tween 80 upper gastrointestinal delivery, soybean oil with most entering the colon were compared. BR-5-DMN exhibited superior effects, enhancing absorption metabolic conversion. It also improved intestinal barrier function microbiome homeostasis, restoring short-chain fatty acid synthesis, especially acetic acid, through releasing dietary fiber, bioactives from rice, in colon. Black particles promoted growth Bifidobacterium while inhibiting Ruminococcus, both synergistically increased Akkermansia abundance. This study highlights potential grain emulsions effective vehicles by regulating release synergistic interactions.
