Gelatin has played a great potential in food preservation because of its low price and superior film forming characteristics. This review provides comprehensive overview the latest research progress application gelatin technologies (film, coating, antifreeze peptide, etc.), discussing their mechanisms efficiency through viewpoints quality shelf life animal aquatic products as well fruits vegetables. It showed that bioactive intelligent gelatin-based films exhibit antibacterial, antioxidant, water resistance pH responsive properties, making them excellent for preservation. In addition, properties also intuitively reflect freshness by color. Similarly, hydrolysate can be widely used peptides to reduce mass loss during freezing extend frozen food. However, extensive works are still required commercial values.
