Abstract This study aimed to enhance the oxidative stability of soybean oil‐in‐water emulsions using acid‐hydrolyzed and unhydrolyzed extracts obtained from sugar beet leaves. The optimum extraction process, which includes 8 min ultrasonication followed by a 2‐h acid hydrolysis, released new phenolics (e.g., catechin, myricetin, etc.) increased total phenolic content (TPC) 586.24 ± 11.45 982.42 6.61 μmol gallic equivalent (GAE)/L, 2,2‐diphenyl‐1‐picrylhydrazyl (DPPH) radical inhibition 46.63 1.39 60.87 1.12%. Acid hydrolysis cupric chelating activity while decreasing ferrous trans ‐ferulic concentration significantly ( p < 0.05). extract at TPC 100 GAE/L prolonged lag phase hexanal accumulation in emulsion 0 days, 400 12 days. results show that high concentrations may act as prooxidants.

The continued use of synthetic additives in food production and preservation has raised concerns among consumers, given their potential negative health effects. Researchers industry experts have been exploring plants with potent functional compounds as an alternative source natural such anthocyanins, which can be utilized to produce safe additives. Given various biological activities, great exists for anthocyanins used preserve or foods benefits. However, fully realize the economic benefits a deep understanding different plant sources well composition, extraction techniques, function products, is warranted. Therefore, this paper critically reviews application nutraceutical industries, highlighting emerging benefits, challenges industry. This review also offers insights that could future research help establish novel sustainable methods manufacturing anthocyanin-based value-added products ingredients.

Several medicinal herbal plants are extensively used as sources of bioactive compounds with beneficial effects on human health. This study assessed the procyanidin and polyphenol profiles together antioxidant potential seven medical matrices. To achieve this aim, extraction from grape pomace was optimized validated by monitoring monomeric-trimeric procyanidins. The proposed quantification method applied to herbs, it proved be a very efficient protocol for procyanidin-rich extracts analysis. In addition, Paullinia cupana Kunth. seed identified rich source procyanidins (about 5 mg/g dry matrix each dimeric about 3 trimeric) high properties. polyphenolic profile HPLC-HESI-MS/MS in vitro activity evaluated DPPH assay explore properties extracts, which were substantially higher Peumus boldus Molina leaves (935.23 ± 169 μmol Trolox equivalent/g weight) concerning other Moreover, Pearson coefficient value observed between total flavonoid content (TFC) comparison (TPC) DPPH, indicating flavonoids principal extracts.

Increasing research is being directed toward the production of value-added products using plant extracts that are super-fortified with antioxidants. In this study, extraction parameters for bioactive compounds (such as polyphenols) from Nasturtium officinale leaves and their antioxidant properties were optimized response surface methodology. The optimization procedure examined effects temperature, time, solvent composition on conventional magnetic stirring (ST). addition, impacts two green techniques—pulsed electric field (PEF) ultrasound (US)—were evaluated individually in combination to assess potential enhance compounds. According our findings, under proposed conditions (a PEF, US, ST a technique, 50% ethanolic solvent, 30 min at 80 °C). N. leaf extract proved be an excellent source compounds, containing rosmarinic acid (3.42 mg/g dried weight (dw)), chlorogenic (3.13 dw), total polyphenol content (28.82 mg gallic equivalents (GAE)/g strong properties. FRAP method measured 57.15 μmol ascorbic (AAE)/g dw, while DPPH radical scavenging activity 47.55 AAE/g dw. This study was carried out evaluate improve concentration extract, resulting product multiple applications across food, cosmetic, pharmaceutical industries.
