Abstract This study aimed to enhance the oxidative stability of soybean oil‐in‐water emulsions using acid‐hydrolyzed and unhydrolyzed extracts obtained from sugar beet leaves. The optimum extraction process, which includes 8 min ultrasonication followed by a 2‐h acid hydrolysis, released new phenolics (e.g., catechin, myricetin, etc.) increased total phenolic content (TPC) 586.24 ± 11.45 982.42 6.61 μmol gallic equivalent (GAE)/L, 2,2‐diphenyl‐1‐picrylhydrazyl (DPPH) radical inhibition 46.63 1.39 60.87 1.12%. Acid hydrolysis cupric chelating activity while decreasing ferrous trans ‐ferulic concentration significantly ( p < 0.05). extract at TPC 100 GAE/L prolonged lag phase hexanal accumulation in emulsion 0 days, 400 12 days. results show that high concentrations may act as prooxidants.

Increasing research is being directed toward the production of value-added products using plant extracts that are super-fortified with antioxidants. In this study, extraction parameters for bioactive compounds (such as polyphenols) from Nasturtium officinale leaves and their antioxidant properties were optimized response surface methodology. The optimization procedure examined effects temperature, time, solvent composition on conventional magnetic stirring (ST). addition, impacts two green techniques—pulsed electric field (PEF) ultrasound (US)—were evaluated individually in combination to assess potential enhance compounds. According our findings, under proposed conditions (a PEF, US, ST a technique, 50% ethanolic solvent, 30 min at 80 °C). N. leaf extract proved be an excellent source compounds, containing rosmarinic acid (3.42 mg/g dried weight (dw)), chlorogenic (3.13 dw), total polyphenol content (28.82 mg gallic equivalents (GAE)/g strong properties. FRAP method measured 57.15 μmol ascorbic (AAE)/g dw, while DPPH radical scavenging activity 47.55 AAE/g dw.
