Low-molecular-weight (LMW) molecules of biological origin like microbial glycolipid biosurfactants can self-assemble in water, with a tunable structure by soft chemistry approach (pH, temperature, and ionic strength). The unique molecular glycolipids gives possible access to wide variety aqueous self-assembled structures, although highly unpredictable beforehand. presented here consists glucose group linked C18:1-cis fatty acid (G-C18:1) produced the fermentation Starmerella bombicola ΔugtB1. Due carboxylic acid, supramolecular self-assembly is pH dependent. In range 5–7, G-C18:1 forms vesicles, while above 7, it micellar phase. Adding metal salts (ion radius ascending order: Al3+, Fe3+, Ni2+, Mg2+, Cu2+, Zn2+, Co2+, Fe2+, Cr2+, Mn2+, Au3+, Ca2+, Ag+, Sr2+, Ba2+), vesicle phase generally precipitates. Metal complex speciation (Al3+, Fe2+) added drive formation wormlike gels, often observed for surfactants water. On contrary, free ions (Cr2+, Ag+) same unexpectedly hydrogels fibrillar structure, amphiphiles (peptides, peptide-derivatives) but not surfactants. Preparing Biosurfactant Glucolipids from Crude Sophorolipids via Chemical Modifications and Their Potential Application in the Food Industry DOI

This investigation developed a novel strategy for efficiently preparing glucolipids (GLs) by chemically modifying crude sophorolipids. Running this strategy, sophorolipids were effectively transformed into GLs through deglycosylation and de-esterification, with yield of 54.1%. The acquired then purified via stepwise extractions, 66.2% 95% purity was recovered. are more hydrophobic present stronger surface activity than acidic (ASLs). Low-molecular weight gelators (LMWGs) are small molecules (Mw < ∼1 kDa), which form self-assembled fibrillar network (SAFiN) hydrogels in water when triggered by an external stimulus. A great majority of SAFiN gels involve entangled fibers, analogy to a polymer good solvent. In some rare cases, combination attractive van der Waals and repulsive electrostatic forces drives the formation bundles with suprafibrillar hexagonal order. this work, unexpected micelle-to-fiber transition is Ca2+ or Ag+ ions added micellar solution novel glycolipid surfactant, whereas salt-induced fibrillation not common for surfactants. The resulting SAFiN, forms hydrogel above 0.5 wt%, has "nano-fishnet" structure, characterized fibrous both fibers β-sheet-like rafts, generally observed silk fibroin, actin mineral imogolite nanotubes, but known SAFiNs. raft domains cryo-TEM SAXS seem contribute stability gels. Furthermore, obtained fermentation from natural resources (glucose, rapeseed oil), thus showing that naturally engineered compounds can have unprecedented properties, compared wide range chemically derived amphiphiles.
