The provision of ecosystem services from Mediterranean permanent grasslands is threatened due to shifting management practices and environmental pressures. Accelerating the transition of agri-food systems towards higher sustainability requires greater understanding consumers' decision-making related to sustainable food choices, together with competing drivers which may result in unsustainable choice demand. Grasslands provide a wide range of provision, support, regulation, and cultural ecosystem services (ESs), whose valuation methods can be grouped into three categories (ecological, sociocultural, economic).
