ABSTRACT The changes in lifestyle patterns and the adoption of a busy life have led to widespread acceptance ready‐to‐cook (RTC) products, particularly meat products. Chicken patties, being preprocessed RTC product, are consumed worldwide. This study investigates impact perforated modified atmosphere packaging (MAP) on physicochemical, sensory microbial attributes chicken patties stored at 4 °C for 14 days. focus is assessing consequences package damage occurring any stage supply chain. Perforations measuring 0.2 mm 0.4 were introduced into polypropylene boxes, wherein subsequently packaged under five distinct gas concentrations CO 2 (ranging from 0% 50%) O 50%), alongside constant level 50% N . A control group containing normal air along with perforations was included comparison other groups atmospheres. results indicated that (PP CON9 ) highest concentration (50%) lowest (0%) most effective preserving quality during storage by reducing moisture loss (3%), protein denaturation (0.38%), lipid oxidation (0.54%), cooking (0.72%), shrinkage (0.18%), water holding capacity (5.67%), losses spoilage. occurred A2 ). highlights even if damaged, it still efficiently preserves compared damaged air. Red grapes (Vitis vinifera L.) have a high sugar content, thin skins, and relatively short shelf-life after harvesting. We developed polylactic acid/polybutylene succinate film, prepared by extrusion of acid polybutylene succinate, that significantly prolonged the red from 8 to 12 days delaying loss weight, hardness, reduction in soluble solid content Further mechanistic study showed this modified atmosphere film delayed senescence harvested grape, phenomenon was highly related lower active oxygen species production higher antioxidant enzyme activity compared non-packaged grape. The proposed continuous dynamic microenvironment regulation system is promising method mechanisms respiratory metabolism fruit extends food while reducing waste. Abstract A modified atmosphere packaging (MAP) system in pallets was developed for ‘Padrón’ peppers as a way to extend their shelf-life while maintaining good fruit quality. Peppers were stored at 6 °C cardboard boxes arranged on wrapped micro-perforated low-density polyethylene (LDPE) bags. Physico-chemical (moisture, firmness, color, chlorophylls, carotenoids, ascorbic acid, and total phenolic content) sensory analysis carried out after 0, 7, 14, 21 days of storage. An initial mixture 11.8% O 2 –8.5% CO prevented anaerobic conditions kept suitable levels throughout the entire storage period.
