In this state-of-the-art review, we discuss these lipids, their activity against obesity mental or neurological disorders, with a focus on proposed cellular targets ways in which they produce beneficial effects. This study investigated the development of hybrid cheese analogues (HCA) made with fermented brewery side-stream ingredients (spent yeast and malt rootlets) dairy milk.
