This study investigates biotechnological innovations for sustainable probiotic bread conducting thorough review encapsulation methods analyzing prior on encapsulated probiotics across different baking conditions storage periods. Encapsulation emerges as promising strategy, involving protection with specialized layers, notably multilayered alginate-chitosan coatings, shield them from degradation.
