Microbial exopolysaccharides (EPSs) are receiving growing interest today, owing to their diversity in chemical structure and source, multiple functions, immense potential applications many food non-food industries. Their health-promoting benefits for humans deserve particular attention because of various biological activities physiological functions. The aim this paper is provide a comprehensive review microbial EPSs, covering (1) biochemical diversity, including composition, biosynthesis, bacterial sources belonging mainly lactic acid bacteria (LAB) or probiotics; (2) technological analytical aspects, especially production mode characterization; (3) aspects based on functions; (4) current future uses medical pharmaceutical fields, particularly prebiotic, anticancer, immunobiotic properties, as well other industrial agricultural sectors.

This study investigated the potential effects of corn protein activity peptides (CPAPs) on inflammation response levels and gastrointestinal microbiota in Helicobacter pylori (H. pylori) infection mice. CPAPs significantly up-regulated mRNA expression anti-inflammatory factor IL-10 down-regulated pro-inflammatory factors TGF-β, TLR4, MyD88, NF-κB, indicating that may antagonize H. pylori-induced inflammatory responses by inhibiting NF-κB signaling pathways. Through intervention CPAPs, colonization stomach was reduced. Additionally, structural composition improved, with an increase abundance diversity.
