It is more effective to maintain good health than regain it after losing it. This work focuses on the biochemical defense mechanisms against free radicals and their role in building maintaining antioxidant shields, aiming show how balance, as much possible, situations which we are exposed radicals. To achieve this aim, foods, fruits, marine algae with a high content should constitute basis of nutritional elements, since natural products known have significantly greater assimilation efficiency. review also gives perspective use antioxidants can extend life food products, by protecting them from damage caused oxidation well additives.

The demand for sustainable and eco-friendly extraction methods bioactive compounds from natural sources has increased significantly in recent years. In this study, we investigated the effectiveness of microwave pretreated ultrasound-assisted (MPUAE) process antioxidants (TPC, DPPH, FRAP) papaya pulp peel. optimized variables MPUAE were determined using Box-Behnken design tool response surface methodology. Our results showed that peel 675.76 669.70 W power, 150 s irradiation time, 30 °C ultrasound temperature, 19.70 16.46 min ultrasonic respectively. Moreover, was found to be more energy-efficient environmentally friendly compared conventional ultrasound-associated (UAE) technique. emitted less CO2 environment had a shorter resulting cost-effective process. study suggests potential promising alternative industrial other sources.

BackgroundLactic acid bacteria (LAB) are utilized as a starter culture in the manufacturing of fermented dairy items, preservative for various food products, and probiotic. In our country, some research has been carried out, even if LAB plays principal role preservation improves texture taste foods, that is why we tried to evaluate their probiotic effect. The objective this was determine antibacterial activity Lactococcus lactis (L. lactis) against Staphylococcus aureus (S. aureus) ATCC 29213, investigate antioxidant activity, characterize sensitivity 18 antibiotics.MethodsA total 23 subsp. cremoris, L. Lactis diacetylactis, were isolated from cow's raw milk. performed using two techniques, competition nutrients technique utilizing components nature, disk diffusion method. studied different antibiotics tested on Man rogosa sharp (MRS) agar commercial antibiotic disks. All strains examined activity. by 2,2-diphenyl-1 picrylhydrazyl (DPPH).ResultsThe results showed MRS medium more adapted than Muller Hinton Agar (MHA) S. 29213. Also, exhibited notable degree displayed higher activities, followed ssp. biovar. lastly, cremoris Lc 26 among all high potential reaching 40±3 mm slightly moderate (10.56±1.28%-26.29±0.05%). resistance test indicate resistant cefotaxime, sulfamethoxazole-trimethoprim, streptomycin sensitive Ampicillin, Amoxicillin, Penicillin G, Teicoplanin, Vancomycin, Gentamicin 500, Tetracycline, Chloramphenicol. These strain falls within criteria not posing any harmful effects human health. important properties recorded derived production active metabolites, such protein, diacetyl, hydrogen peroxide, lactic acid, together with fight nutrients.ConclusionThis study suggests could be added an agent 29213 can provide nutritional property potential.

The effects of high-pressure processing (HPP) (450 MPa/600 MPa/3 min) on the carotenoid and vitamin E contents smoothies made from strawberry, orange juice, banana apple, same enriched with dietary fiber discarded carrots were compared. bioaccessibilities these compounds also evaluated over course 28 days at 4 °C. application HPP in formulations significantly increased β-cryptoxanthin, α-carotene β-carotene retained lutein, zeaxanthin compared to untreated samples. A decreasing trend content each compound was observed an increase storage time. initially led reductions bioaccessibility individual compounds. However, overall, during storage, there bioaccessibility. This suggests that influences cell structure, favoring release micelle formation. is a sustainable method preserves or enhances extractability ready-to-drink fruit beverages. Furthermore, incorporation carrot discards supports circular economy practices health potential product.
