Abstract Sausage is susceptible to oxidative changes in lipids and microbial spoilage due the presence of water, fat, protein, vitamins. Bee pollen (BP) as a source potential antioxidants antibacterial compounds can effectively prevent lipid peroxidation meat products. The aim present study was investigate antioxidant activities BP effects nano/microparticles bee extract (n/m BP) at concentration 125 250 mg/100 g on stability growth high‐fat sausage during 30 days storage 4°C. formation particles nano/micro range confirmed by scanning electron microscopy. High concentrations total phenolic (28.26 ± 0.10 mg GAE/g with activity (EC 50 = 5.4 0.07 mg/mL) were detected BP. Based microdilution assay, minimum inhibitory n/m for all test bacteria 1000 (μg/mL) bactericidal 2000 Staphylococcus aureus Bacillus cereus 4000 Escherichia coli Pseudomonas aeruginosa . treatment (250 meat) showed higher pH value ( p < .05) lower TBARS values than ascorbic acid (100 control period. analysis that addition led significant decrease bacterial count, coliforms, S. , fungal population compared other samples. results show (125 g) improve texture, taste, overall acceptability sample. Bee pollen is a complex mixture of floral pollen, and nectar fused substances from bee saliva. It well known for its high content proteins, carbohydrates, lipids, vitamins, phenolic compounds, among various other physiologically active components. Its composition varies significantly depending on botanical sources environmental conditions. This study investigates the relationship between origins, chemical compositions, antioxidant activities 15 samples collected different areas in Mila region northeastern Algeria. The origins were identified using palynological method, categorizing 11 as monofloral rest polyfloral. total flavonoid contents measured, their capacities evaluated through DPPH radical scavenging assay, reducing power assay (FRAP), capacity (TAC). HPLC analysis was conducted to measure 17 compounds. data indicated that (TPC) (TFC) ranged 7.72 ± 0.29 23.49 1.48 mg GAE/g 0.00 5.57 0.27 QE/g respectively. variations concentration bioactive compounds led significant differences activities: (IC50: 1.12 0.15 0.21 mg/mL), FRAP (EC50: 0.06 TAC (262.17 3.41 677.14 12.81 EAA mg/100 g pollen), with most being types Cistus type Brassica type. A strong correlation observed TPC, TFC, activity. Among tested only coumaric acid, rutin, myricetin, naringenin, resveratrol, kaempferol detected. In conclusion, both polyfloral represent rich source polyphenols potential.

Bee bread has received attention due to its high nutritional value, especially phenolic composition, which enhances life quality. The present study aimed evaluate the chemical and antimicrobial properties of bee (BB) samples from Romania. Initially, alcoholic extracts (BBEs) were obtained BB collected prepared by Apis mellifera carpatica bees. composition BBE was characterized Fourier Transform Infrared Spectroscopy (FTIR) total phenols flavonoid contents determined. Also, a UHPLC-DAD-ESI/MS analysis compounds (PCs) antioxidant activity evaluated. Furthermore, BBEs evaluated qualitative quantitative assessments. BBs studied in this paper are provided 31 families plant species, with content varying between 7.10 18.30 mg gallic acid equivalents/g 0.45 1.86 quercetin BB, respectively. Chromatographic revealed these had significant compounds, flavonoids much higher quantities than acids. All presented against all clinical standard pathogenic strains tested. Salmonella typhi, Candida glabrata, albicans, kefyr most sensitive, while BBEs’ antifungal on C. krusei not investigated any prior research. Thus, Reversed-phase high-performance liquid chromatography with Ultraviolet Detection RP-HPLC-UV done, antibacterial, enzymatic, healing, DNA anti-Herpes Simplex Virus 1 (anti- HSV-1) tests are carried out. Results showed good antioxidant activity, variation selective activity against Gram negative bacteria strains (Escherichia coli “E.coli”, Salmonella typhimurium Yersinia pestis), inhibition acetylcholinesterase α-glucosidase activation Superoxide Dismutase (SOD). P4, P7, P8 P14 show high while P6 P10 have Only P7 anti-HSV-1 activity. Conclusion different activities varied according phytochemical composition each sample not harvest region. When TNF-α-inflamed were pretreated (10 50 µg/mL), upregulated interleukin-8 gene cyclooxygenase-2 protein expression significantly attenuated. modulated nuclear factor-κB signaling pathway decreasing active phosphorylated form levels.
