Background Probiotics are live bacteria that provides numerous healthy and beneficial effects to the consumers. The present study aimed investigate effect of a probiotic candidate Staphylococcus epidermidis SAS1, in immunoregulation obesity management. Methods : This was isolated from soil sample collected region fruit waste decomposition. In vitro cytotoxicity assessed using THP-1 (human leukemia monocytic cell line) cells MTT assay. Results An IC50 value 47.52 ± 0.18 μg/mL shrinkage were observed along with release cellular content cells. higher production reactive oxygen species lesser interleukins (IL-4, 5, 13) attributed antiallergic potential this strain. Furthermore, evaluation 3T3-L1 identified strain as promising for anti-obesity treatment. 514.4 0.061 μg/mL. Discussion extract shown have good lipase-inhibiting enzyme activity reported prevent adipogenesis, depicted by increased HDL levels decreased LDL triglyceride levels. These results suggested SAS1 may therapeutic use treatment allergies.

The increase in the nutritional awareness of consumers has meant that products with high value, sensory attractiveness, and safety are currently being sought on market. One aspects which innovativeness a food product can be considered is preservation method. Fermentation one oldest methods. In practice, biopreservation primarily method using non-pathogenic microorganisms and/or their metabolites to microbiological extend shelf life. Advances microbiology genetic engineering, taking into account various sources microbiota isolation, have rediscovered fermentation process allowed us obtain innovative functional products. Recently, bacteriocins gained importance. For many years, they been applied as biopreservatives manufacturing, alone or combination other preservatives. most promising perspective seems development combined systems including natural preservatives (i.e., bacteriocin lipopeptides), emerging non-thermal technologies, methods such encapsulation nanotechnology active packaging. this paper, narrative review presented analyze recently published literature regarding role microbial produced antibacterial compounds biopreservation. New technologies an alternative artificial were also discussed.

Summary The drive towards the consumption of healthy foods and adoption beneficial eating habits has spurred to develop innovative probiotic food products with antibacterial characteristics. In recent years, researchers have been exploring use edible films antimicrobial properties improve viability effectiveness probiotics in meals protect from harmful pathogens. However, there are various factors that can affect films. These include composition film, type used, conditions which film was stored transported. This review provides a brief overview on active packaging effects, its storage stability, future prospects. summary, system sustainability is crucial, tackling issues vital. Synthetic plastic harms environment, so we need eco‐friendly alternatives like offer benefits better safety, longer shelf life, pathogen protection. Challenges preserving probiotics, dealing regulations, expanding use. Collaboration between science industry essential for greener, healthier future.

Introduction Kefir beverage has beneficial microorganisms that have health-giving properties; therefore, they a good potential to be probiotic. This study evaluated the probiotic potential, technological, and safety characteristics of Enterococcus faecalis , Lactococcus lactis Pichia fermentans isolated from traditional kefir beverages. Method First, isolates were in terms resistance acid, alkali, bile salts, trypsin, pepsin gastrointestinal tract. The auto-aggregation co-aggregation ability measured using spectrophotometry. Antimicrobial activities assayed against important food-borne pathogens agar well diffusion method. Moreover, gamma-aminobutyric acid (GABA) production was investigated by thin-layer chromatography (TLC). Result Among isolates, P. had an 85% total survival rate, but its amount reached below 6 log CFU/ml which is considered non-resistant, it showed highest (74.67%). only L. antimicrobial activity with E. coli PTCC 1338 (54.33%) monocytogenes ATCC 7644 (78%). Finally, evaluation technological strains produced GABA safe. Discussion Although not resistant tract, their supernatant contained valuable natural compounds, including antioxidants, GABA, antimicrobials, can used produce functional foods medicines. In addition, other approaches, such as increasing initial number strains, carriers encapsulating effectively increase survivability

Infant feces and breast milk are sources of lactic acid bacteria with interesting functional technological properties. Therefore, we focused on the isolation characterization new potential probiotic strains from infant milk. Nine were identified based 16S rRNA sequences Lacticaseibacillus rhamnosus, Limosilactobacillus reuteri, Lactobacillus gasseri. Subsequently, these isolates evaluated for their safety (antibiotic resistance, hemolytic, enzymatic activity) properties (gastrointestinal condition tolerance, hydrophobicity, auto-aggregation, adhesion to Caco-2/HT-29 cell lines, antimicrobial antioxidant properties, production exopolysaccharides). All non-hemolytic resistant streptomycin, kanamycin, vancomycin. They also demonstrated activity against five selected pathogens (Staphylococcus aureus, Bacillus cereus, Escherichia coli, Salmonella sp., Enterococcus faecalis) exopolysaccharides. Isolates rhamnosus S1F S6C together gasseri M8C showed highest ability survive 3.0 g/L bile salts a good property, which is important gastrointestinal tract (GIT) colonization or inhibition pathogens. Following in vivo characterization, three feces, M6C milk, applications food industry.

Bacteroides dorei is a promising candidate for the next-generation probiotics (NGP), but its accurate identification remains challenging due to close taxonomic relationship with other species. This study aimed mine novel specific molecular target detecting dorei. Using pan-genome analysis and PCR validation, species-specific genes size of 193 bp were identified, specificity designed primer pair (30 bp) this was confirmed. The assay demonstrated high applicability and/or nontarget strains in three simulated food systems, yielding no false-positive or false-negative results. Additionally, qPCR method developed quantifying dorei, linear detection range from 1 × 108 101 CFU/mL an R2 value greater than 0.98. exhibited sensitive capabilities suitable both feces samples. Overall, our established assays rapid advancing exploration species application NGPs functional foods across various product forms.
