Consumers
today
seek
safe
functional
foods
with
proven
health-promoting
properties.
Current
evidence
shows
that
a
healthy
diet
can
effectively
alleviate
oxidative
stress
levels
and
reduce
inflammatory
markers,
thereby
preventing
the
occurrence
of
many
types
cancer,
hypertension,
cardiovascular
neurological
pathologies.
Nevertheless,
as
fruits
vegetables
are
mainly
consumed
fresh,
they
serve
vectors
for
transmission
pathogenic
microorganisms
associated

disease
outbreaks.
As
result,
there
has
been
surge
in
interest
microbiome
vegetables.
Therefore,
given
growing
sweet
cherries,
since
their
microbial
communities
have
largely
ignored,
primary
purpose
