Lactic Acid Bacteria play an important role in the milk fermentation processes of traditional cheeses and have become target for development novel cheese cultures because their ability to confer health benefits. This study aimed evaluate probiotic potential 12 (LAB) strains previously isolated molecularly identified from artisanal Colombian Double-Cream Cheese. Probiotic properties, including safety (hemolysis sensibility antibiotics), pH bile salt tolerance, auto-aggregation, cell surface hydrophobicity, antibacterial activity, exopolysaccharide production, were examined. None hemolytic, Pediococcus (16, 18) Lactobacillus (28, 29) found be sensitive all antibiotics. Moreover, tolerated (3.0, 6.5 8.0) conditions (0.3, 0.6 1.0 % w/v). pentosaceus (16), Leuconostoc citreum (17), acidilactici (18), Enterococcus faecium (21,22), faecalis (24) Limosilactobacillus fermentum (29) exhibited medium autoaggregation affinity chloroform.
