Banana processing industry generates a large number of by-products mainly constituted by peel that can be good source bioactive polyphenols. Extraction phenolic compounds using optimum extraction conditions enhances the yield and quality desired compounds. Meanwhile, well-chosen optimization procedure has ability to reduce amount time, solvent, temperature needed, which will consequently lower overall process cost. In this study, enzyme-assisted was evaluated for maximum from banana peels three enzymes viscozyme® L, cellulase, pectinase. The were achieved enzyme concentration (0–2%, v/v), time (1–12 hrs), (35–60 °C), solute-liquid ratio (1:5–1:30, w/v) at pH 4.0. responses such as total phenol content (TPC), flavonoid (TFC), DPPH ABTS inhibition activity, α-glucosidase inhibitory activity determined spectrophotometric analysis. Viscozyme® L found more effective compared pectinase, condition obtained with 1.0% concentration, 9 hrs 55 °C temperature, 1:25. values TPC, TFC, ABTS, optimized 25.37 mg GAE/g DM, 13.99 QE/g 81.59%, 88.25%, 74.67% scavenging ability, respectively. Therefore, viscozyme-assisted could promising method utilization valuable ingredients food pharmaceuticals.
