Abstract Poultry meat and eggs are considered as major sources of food for rapidly increasing human population across the globe. During rearing poultry, different antibiotics were included in poultry diets sub therapeutic doses to attain improvements growth performance. The utilization of novel materials in the biofuel production domain has been regarded as a significant advancement catalyst development. Incorporating lipases biodiesel manufacturing is often viewed cost-restrictive phase since expenses associated with recovering these catalysts can render market expectations unfeasible. Within this investigation, mesoporous silica (MPS) particles were assessed supporting medium for immobilizing commercial lipase, subsequent to their ethyl ester synthesis. Initially, was achieved through co-precipitation technique at consistent pH and subsequently chosen an immobilization support enzyme. characterization biocatalyst produced performed using various analytical methods including X-ray diffraction (XRD), scanning electron microscopy (SEM), Fourier-transform infrared spectroscopy (FTIR), BET analysis. Novozym 435 lipase then immobilized within matrices, followed by transesterification process algal oil derived from Nannochloropsis. resulting samples demonstrated compliance standards, exhibiting conversion rate exceeding 94.8%. Utilizing flavorings in drinks enhances aroma, preserves natural properties, and poses challenges production costs crop demands. Mitigating these is possible by employing waste products like potato skins. This investigation aims to explore the potential of dried mint-flavored stirred Buttermilk enriched with harvested water extract (HPE) for improved functionality acceptability. To achieve this objective, betalains, antioxidant, antimicrobial activities were examined at pH 4.5 5.5, along phenolic flavonoid content. Following that, HPE was incorporated different concentrations 3% (T1), 5% (T2), 7% (T3) assess stability physicochemical nutritional value, lactic acid bacteria (LAB) content during storage (for 0, 7, 14, 21 days 5°C). In comparison control group (0% HPE), inclusion remarkably (p<0.05) reduced pH, increased total acidity, LAB, vitamin C, antioxidant activity, sensory preference.
