In this study, Pickering emulsion (PE) stabilized by whey protein isolate/soybean isolate (WPI/SPI) composite particles were used as a template to construct gel (PEG). The results showed that the PE WPI/SPI had good centrifugal and storage stability at 4 °C (at least months). Furthermore, When SA concentration was 3% PE:SA ratio of 5:1, obtained PEG with water-in-oil type exhibited smaller droplet size, denser network structure, solid-like behavior in linear viscoelastic region using laser particle size analyzer, rheometer, confocal scanning microscopy. Moreover, increase hydrogen bonds after addition confirmed increased β-sheet Fourier-transform infrared spectroscopy, structure interchain bonds, thus forming structure. addition, PEGs could effectively encapsulate peptide FDRPFL, highest encapsulation efficiency 72.8%. vitro digestion revealed improve bioaccessibility FDRPFL mainly followed release mechanism non-Fickian superstate II. Taken together, present findings provide theoretical framework for development application particles.

Ursolic acid (UA), a pentacyclic triterpenoid found in various fruits and herbs, has the potential as an anticancer agent against multiple cancer types. Nevertheless, its clinical use was limited by poor water solubility. To overcome this drawback, several nanocarriers were proposed to increase bioavailability efficacy of UA. However, insights into cellular targets mechanisms UA nanoparticles (NPs) remain limited. In study, chitosan-coated poly(lactic-co-glycolic acid) (PLGA/CS) NPs loaded with The obtained (UA)-PLGA/CS spherical approximate size 250 nm encapsulation efficiency 25%. Owing their promising drug carriers, successfully delivered breast cells (MCF-7 MDA-MB-231). Moreover, enhanced activity UA, evidenced IC50 values 26.74 40.67 μM MCF-7 MDA-MB-231 cells, respectively.
