Background & Aims Butyrate (one of the short-chain fatty acids), a major byproduct fermentation non-digestible carbohydrates (e.g. fiber), is supposed to have anti-obesity and anti-inflammatory properties. However, butyrate's potential mechanism in preventing obesity efficient form administration remain be clarified. This study aimed to compare the nutritive value and obesity prevention of ordinary Cordyceps militaris (CM) selenium-enriched CM (SeCM). The results indicated that Se enrichment significantly increased total carbohydrate soluble dietary fiber content, while protein insoluble content decreased.
