Cinnamon ( Cinnamomum spp.; family Lauraceae), a plant widely used as spice and flavoring agent in the perfume industry, has high therapeutic value. However, components chemical properties of cinnamon extracts vary depending on part plant, method, solvent for extraction. Green extraction methods using safe green solvents have gained increased interest recent years. Water is an environmentally friendly preparing extracts. This review focuses various preparation techniques aqueous extract cinnamon, its major bioactive components, their beneficial roles different pathological conditions, specifically cancer inflammation.
