The quality of dragon fruit juice is based on brix and acidity, which determine flavour. Brix acidity are usually tested using sensory titration methods, have several limitations, such as being subjective time-consuming. Visible-Near Infrared (Vis-NIR) spectroscopy method at a wavelength 350-1000 nm in transmittance mode suitable for detecting the juice. non-destructive, fast, produces no waste. In this research, pure samples were mixed water liquid sugar concentrations, i.e., 10%, 20%, 30%, 40%, 50% w/w. Spectra was obtained from portable Vis-NIR spectrometer juice, converted into absorbance. Actual an acid refractometer. Prediction models content partial least square regression (PLSR) constructed actual values absorbance spectra. Results showed that PLSR could predict with R 2 C 0.822, RMSEC 3.971, RPD 1.933, 0.433, 0.583 %, 1.348. research proved allows prediction

Red pitaya is a tropical fruit rich in phytonutrients essential for human health. The savored either through its processed products or raw consumption. This study aimed to assess the physicochemical properties of red juice extracted from ultrasonic-pretreated flesh. flesh was cut into cubes and subjected different durations (20, 40, 60 min) ultrasonic treatment. total soluble solids, pH, titratable acidity were unaffected by pretreatment durations. Compared with non-ultrasonic pretreated sample, levels organic acids, phenolics, anthocyanins increased (p < 0.05) following min pretreatment. duration sonication influenced antioxidant activity juice. pilot shows that using ultrasound enhances quality

Dragon fruit or pitaya is an incredible functional food that provides nutraceutical benefits owing to its prebiotic activity and has gained attention in recent years multiple therapeutic values such as anti-oxidant, anti-cancer, anti-diabetic, anti-microbial, hepatoprotective anti-hyperlipidemic activities. It also exhibits wound healing, anti-anemic, anti-viral, anti-inflammatory microvascular protective properties. These have been a result of different phytoconstituents polyphenols, pigments, flavonoids, fatty acids, terpenoids, steroids, vitamins, sugars, minerals dietary fibers which can be extracted from peel, seeds flesh part. This review describes wide range components the contains; their method extraction activities they offer. The anti-oxidant anti-cancer effects dragon are attributed presence flavonoids pigments etc. Its facilitated by vitamins sugars; while anti-diabetic mainly due flavonoids. Further, responsible for hepato-protective tissue repair increasing interest researchers on this may further reveal new extraordinary coming years.
