Soybeans are rich in proteins and lipids have become a staple part of the human diet. Besides their nutritional excellence, they also been shown to contain various functional components, including isoflavones, consequently received increasing attention as food item. Isoflavones structurally similar 17-β-estradiol bind estrogen receptors (ERα ERβ). The estrogenic activity isoflavones ranges from hundredth thousandth that itself. play role regulating effects body, depending on situation. Thus, when is insufficient, perform functions estrogen, excessive, block which binds, thus acting an antagonist. In particular, antagonistic important breast, endometrium, prostate, such suppresses cancer occurrence. Genistein, isoflavone, has cancer-suppressing receptor-positive (ER+) cancers, breast cancer. It function enzymes tyrosine protein kinase, mitogen-activated DNA polymerase II, inhibiting cell proliferation inducing apoptosis. Genistein most biologically active potent isoflavone candidate for prevention. Furthermore, among physiological best known antioxidant activities. S-Equol, metabolite genistein daidzein, strong antioxidative effects; however, ability metabolize daidzein into S-equol varies based racial individual differences. may be effective preventing dementia by phosphorylation Alzheimer's-related tau proteins. reduces allergic responses limiting expression mast IgE receptors, involved responses. addition, prevent treat diseases, cardiovascular metabolic syndromes, osteoporosis, diabetes, brain-related high blood pressure, hyperlipidemia, obesity, inflammation. Further, it positive menstrual irregularity non-menopausal women relieving menopausal symptoms middle-aged women. Recently, soybean consumption steep trend Western countries where intake was previously only 1/20-1/50 Asian countries. this review, I dealt with latest research trends substantial interest biological efficacy humans plants, related mechanisms.

Peptides present in foods are involved nutritional functions by supplying amino acids; sensory related to taste or solubility, emulsification, etc.; and bioregulatory various physiological activities. In particular, peptides have a wide range of functions, including as anticancer agents lowering blood pressure serum cholesterol levels, enhancing immunity, promoting calcium absorption. Soy protein can be partially hydrolyzed enzymatically physiologically active soy (or soybean) (SPs), which not only exert but also help acid absorption the body reduce bitterness hydrolyzing hydrophobic acids from C- N-terminus proteins. They possess significant gel-forming, emulsifying, foaming abilities. SPs expected able prevent treat atherosclerosis inhibiting reabsorption bile digestive system, thereby reducing cholesterol, low-density lipoprotein, fat levels. addition, contains pressure-lowering that inhibit angiotensin-I converting enzyme activity antithrombotic platelet aggregation, well anticancer, antioxidative, antimicrobial, immunoregulatory, opiate-like, hypocholesterolemic, antihypertensive animal models, neuroprotective cognitive capacity cardiovascular been reported. chronic kidney disease tumor cell growth regulating expression genes associated with apoptosis, inflammation, cycle arrest, invasion, metastasis. Abstract Key message Genetic resources contributes to the sustainable protein production in soybean. Soybean is an important crop for food, oil, and forage main source of edible vegetable oil protein. It plays role maintaining balanced dietary nutrients human health. The soybean content a quantitative trait mainly controlled by gene additive effects usually negatively correlated with agronomic traits such as yield. selection varieties high yield secure one difficulties breeding. abundant genetic variation germplasm basis overcoming obstacles breeding content. has been cultivated more than 5000 years spread from China other parts world. rich play promoting worldwide. In this paper, origin current status are reviewed; characteristics distribution expounded based on phenotypes; discovery seed protein-related genes well transcriptomic, metabolomic, proteomic studies elaborated; creation utilization high-protein introduced; prospect described.

Abstract Advanced multi-omics technologies offer much information that can uncover the regulatory mechanisms from genotype to phenotype. In soybean, numerous databases have been published. Although they cover multiple omics, there are still limitations when it comes types and scales of omics datasets analysis methods utilized. This study aims address these by collecting integrating a comprehensive set datasets. includes 38 genomes, transcriptomes 435 tissue samples, 125 phenotypes 6686 accessions, epigenome data involving histone modification, transcription factor binding, chromosomal accessibility interaction, as well genetic variation 24 501 soybean accessions. Then, common pipelines statistical were applied mine datasets, resulting in successful establishment user-friendly database called SoyMD (https://yanglab.hzau.edu.cn/SoyMD/#/). provides researchers with efficient query options tools, allowing them swiftly access relevant conduct analyses. Another notable feature is its capability facilitate candidate genes, demonstrated case on seed oil content. highlights immense potential breeding functional genomics research.

The term Conjugated Linoleic Acid (CLA) refers generically to a class of positional and geometric conjugated dienoic isomers linoleic acid. Among the acid cis9, trans11-CLA (c9, t11-CLA) trans10, cis12-CLA (t10, c12-CLA) are found be biologically active isomers, they occur naturally in milk, dairy products meat from ruminants. In addition, some vegetables seafoods have also been reported contain CLA. Although CLA levels these natural sources insufficient confer essential health benefits, anti-carcinogenic or anti-cancer effects current interest. rumen, is an intermediate isomerization biohydrogenation process stearic conducted by ruminal microorganisms. addition rumen bacteria, other such as Propionibacterium, Bifidobacterium lactic bacteria (LAB) capable producing this regard, Lactiplantibacillus plantarum (formerly Lactobacillus plantarum) has demonstrated ability produce multiple enzymatic activities, including hydration, dehydration, isomerization. L. one most versatile species LAB bacterium widely used food industry microbial culture. Thus, review we critically analyzed literature produced last ten years with aim highlight potentiality well optimal conditions for production plantarum. Evidence was provided suggesting that use appropriate strains plantarum, starter additional culture fermented foods, can considered critical factor design new CLA-enriched functional foods.

Abstract An increasing number of studies have shown that the consumption soybeans and products is beneficial to human health, biological activity soy may be attributed presence Soy Isoflavones (SI) in soybeans. In intestinal tracts humans animals, certain specific bacteria can metabolize isoflavones into equol. Equol has a similar chemical structure endogenous estradiol body, which bind with estrogen receptors exert weak effects. Therefore, equol plays an important role occurrence development variety hormone-dependent malignancies such as breast cancer prostate cancer. Despite numerous health benefits for humans, only 30-50% population equol, individual variation gut microbiota being main reason. This article provides overview relevant involved synthesis its anti-tumor effects various types It also summarizes molecular mechanisms underlying properties, aiming provide more reliable theoretical basis rational utilization field treatment.

This study proposes to analyze the chemical composition and hydration kinetics of soryz (Sorghum Oryzoidum) grains in water at different temperatures (20, 30, 40, 45, 50, 60 °C). The analyzed variety presented a starch content over 70%, protein about 10%, with an important supply amino acids good source K, Mg, Ca. efficiency process was studied by applying Peleg’s model, which predicted absorption under experimental conditions. With increasing temperature, rate constant, K1, capacity K2, decreased from 251 239 min/% 2.52 2.49%−1, respectively. Fick’s second law used calculate diffusion coefficient values. These values increased linearly temperature increase 20 50 °C, ranging 0.65 × 10−11 1.54 m2/s. They subsequent rise environmental up 1.49 activation energy 23.86 kJ/mol. Arrhenius equation satisfactorily described dependence diffusivity coefficient. results regarding obtained are decisive preparing this cereal for further use meat analog manufacture.
