Hybrid and plant-based products are an emerging trend in food science. This study aimed to develop three patty prototypes (meat, hybrid, plant-based) enhanced with vegetable fat replacement broccoli extract using a soy allergen-free protein matrix treated high hydrostatic pressure (HHP) sous vide cooking create sustainable nutritious burger alternatives. The samples were evaluated for microbiological safety, proximal composition, physicochemical properties, sensory characteristics, carbon footprint. key findings revealed that the patties had smallest footprint (0.12 kg CO2e), followed by hybrid (0.87 CO2e) meat (1.62 CO2e). showed increased hardness, cohesiveness, gumminess, chewiness compared after treatment. improvement likely results from synergies between plant proteins. Regarding treatments, all samples, highest hardness was observed combined HHP treatment, interesting consideration future prototypes. Sensory analysis indicated maintained appealing visual odour characteristics through while lost evaluator’s acceptance. Although further improvements attributes needed, offer promising balance of improved texture intermediate footprint, making them viable alternative as sustainable, patties.
